This project proposes architecture as atmospheric governance. Where digital platforms reduce every environment to the same curated warmth, the same extracted behaviour, the same erased locality, sDOP governs back as a counter-platform that applies DOP food certification logic to space itself, protecting light, sound, heat, and scent as the conditions that make a place irreducibly itself. The site is Mercato Ritrovato in Bologna’s Bolognina district, where foodification has flattened a culinary culture once defined by neighbourhood difference. sDOP operates through four instruments: a Terroir Catcher reading the district’s behavioural signature through computer vision; a Specification Engine translating that reading into a material brief; a Calibrator running atmospheric simulation to a resonance threshold; and a Recipe Book certifying the result. Like Parmigiano Reggiano, the trattoria it produces is precisely calibrated to Bolognina and impossible to reproduce elsewhere: the product of a governance system that turns place into protocol.

A new trattoria for Bologna Terrazzo floors carry the resonance scores. Tables hang from the ceiling. Seats grow from the ground. Clocks tile the walls. Lightwells read as tables overhead. The familiar displaced until it becomes atmosphere, a space that could only exist here.
